Fantastic, Easy Vegetarian Meal Plan




Planning dinners for every night of the week is a great way to stay on budget and eat healthy meals. This is especially true for vegetarians so that they can ensure they’re eating a well-balanced diet.

Here is a fairly simple, but still delicious, vegetarian meal plan you can follow to stay on track.

Monday: Vegetable Shepherd's Pie >

This vegetable shepherd’s pie recipe is perfect to use up all those veggies in the fridge leftover from the weekend. Change up the veggies in the recipe to whatever you have on hand and create this scrumptious, classic casserole dish for your family.

Monday is my favorite night for serious comfort food, and this recipe fits the bill. As an added bonus, you can make this dish the night before to save time on Monday food prep.

Tuesday: Individual Vegetable Lasagnas served with a spinach salad >

This dish utilizes beans and cheese to add protein, and plenty of delicious fresh vegetables to make it pleasing on the palette and to the eye. Though fairly quick to put together, this unique spin on vegetarian lasagna seems fancy due to the individual servings.

If you don’t have ramekins (the dishes the recipe calls for) on hand, you could absolutely use any oven-proof bowls.

Wednesday: Vegetarian Minestrone Soup served with Italian Breadsticks >

I’m not a vegetarian, but this minestrone recipe is my absolute favorite soup of all time. Not too heavy, but not too light, this soup is perfect served up with breadsticks for dipping.

It is a slow cooker recipe, which is perfect for often-busy Wednesday nights. It is so easy to make! Other than boiling the pasta, it comes together in minutes.

Thursday: Butternut Squash Risotto >

If you’ve read many of my other articles, you might have picked up on the fact that I LOVE butternut squash. It is sweet, rich and nutty, and I love using seasonal veggies. It is also one of my favorite fresh veggies to purchase simply because it stays fresh for so long.

This butternut squash risotto can easily be made vegetarian by switching out the chicken broth for vegetable broth. It does require the use of a pressure cooker.

Friday: Tex-Mex Rice with Black Eyed Peas >

This rice and bean dish has a little kick! With spinach, avocado and fresh salsa, there is plenty of veggie power in this dinner. The black-eyed peas provide a great protein boost, making this vegetarian meal both satisfying and healthy. Change out the white rice for brown rice or even quinoa to make it even healthier.

Saturday: Udon with Tofu and Asian Greens served with Vegetarian Pot Stickers >

Asian cuisine makes for a perfect date night dinner. The pot stickers are a really fun touch and aren’t restrictively difficult to prepare. Udon noodles can be found in the Asian section of your grocery store, or you can substitute regular linguini.

The tofu in this dish is lightly crispy, making for a delightful textural variety.

Sunday: Sage and Onion Faux Roast served with mashed potatoes and steamed vegetables >

Though pot roast is out of the question for vegetarians, this faux roast will make a perfect Sunday dinner. It is very simple to put together and is sure to please the whole family. Serve this with traditional roast trimmings like mashed potatoes and oven-roasted carrots.

Wild Card Idea: Vegetarian Chili >

Chili can be thrown together in just a few minutes and warmed up in about ten minutes. The speed with which you can prepare it and the fact that most of the ingredients are canned make this an ideal wild card dinner idea. The combination of beans and veggies makes it both filling and healthy.
