Delightfully Paleo Meal Plan

Eating a Paleo diet in our modern world isn’t easy. Avoiding grains, legumes, starchy vegetables and processed foods can be a hassle when you’re tight on time and money.

Here is a Paleo meal plan to help you save your budget and your waistline, while still managing to keep your sanity.

Monday: Paleo Mexican Stuffed Peppers >

These stuffed peppers are hearty and easy to make. Full of fibrous veggies, ground beef and Mexican flavors, this dish is perfect for a simple Monday night Paleo dinner.

Mix together 2 tsp. cumin, 1 tsp. chili powder, 1 tsp. paprika, 1 tsp. dried cilantro, 1 tsp. salt, and ½ tsp. red pepper to use in place of the store-bought taco seasoning. This mixture is so much tastier and more cost-effective that I almost never buy prepackaged taco seasoning anymore.

Tuesday: Paleo Pecan-Crusted Chicken >

The sweet and savory combination of Dijon mustard and raw honey makes this dish a family favorite. Using pecans instead of a more traditional grain-based coating means that this chicken dish is perfect for anyone practicing a Paleo diet.

Serve this delicious main dish with Paleo-friendly vegetables for a quick and easy dinner that requires just a few ingredients.

Wednesday: Paleo Easy Shrimp Stir-Fry >

This recipe could be easily customized to suit your family’s preferences. Use whatever veggies you have on hand and season to taste for a delicious one-skillet dinner that is sure to please everyone in your house.

Though the shrimp needs to marinate for a bit, actual cooking time is fairly quick because shrimp cooks so quickly.

Friday: Slow Cooker Mango Chicken Curry >

This delicious and unique mango chicken curry is prepared in a slow cooker, making it ideal for a fun-filled Friday night. With no dinner prep to attend to, Mom and Dad have plenty of time to spend on exciting activities.

Interestingly enough, this dish includes the mango pit while it is cooking. Just don’t forget to remove it before serving!

Saturday: Spaghetti Squash with Turkey Meatballs >

Use jarred spaghetti sauce that fits into the Paleo diet (I like Newman's Own Sockarooni as the ingredients are pretty clean.

A little white sugar is the only ingredient that hits the non-Paleo radar. Plus, it’s absolutely delicious), or make your own, to create a Paleo-friendly spaghetti and meatball dish.

Everyone loves spaghetti and meatballs, and all of the components are very easy to put together, making for a potentially elegant and yet simple date-night dinner.

This pork shoulder is a delectable dish that will make any Sunday dinner special. Substitute water for the white wine in this recipe to make it more Paleo-compliant.

Wild Card: Quick And Easy Paleo Salmon Cakes >

The wild card is a little more complicated when only whole foods are used. Typically, whole foods require a little more time and effort to prepare. These salmon cakes, however, make for quick and easy Paleo cooking.
