Coming up with dairy free meals isn’t always easy. I mean, no cheese or butter? How does that work? I actually grew up on a dairy farm and had access to the best of the dairy foods. I really was quite spoiled.
But later in life, my health changed. My body can’t handle a lot of foods anymore. And unfortunately, that includes dairy. Seems rather sad that a farm girl can’t even have dairy anymore, doesn’t it? At first it was. If you have ever lived with a food allergy or food intolerance, you know that eventually, it’s for the best. Feeling better physically is really what is important.
Thankfully, there are lots of other great foods to eat!
I have found that coconut oil is a great butter substitute in many of my favorite recipes, including cookies and brownies. And thankfully there are a lot of milk alternatives, such as almond milk, coconut milk, cashew milk, and more. For most recipes, I like to use unsweetened almond milk as it is quite mild in flavor. (Make sure to avoid the vanilla flavored varieties unless you want that in your cooking.)
Ice cream was hard to let go of, but there are lots of awesome-tasting dairy free sorbets out there. My favorite is basically mango puree and sugar. With those as the main ingredients, I should just try to make them myself!
As far as cheese goes, I haven’t ventured into any dairy free options for that yet. Maybe I will someday. But for now, I can’t imagine anything coming close to the awesome flavor and texture of cheese. So for the most part, I just don’t add cheese to what I am eating.
The rest of my family still eats dairy, so I don’t deprive them. My method is to cook the basic meal, then separate my portion out and add the dairy to their portion, if it can work out that way. Sometimes I just adapt a regular recipe with dairy free options and sometimes I pick recipes that already don’t have dairy in them. It’s important to have a variety and try new things.
It does take preparation and practice, but in the end, me feeling well and also giving my family good nutritious meals is what it’s all about. If you are extremely allergic or sensitive to dairy, always make sure to check labels and food sources to ensure that you are not ingesting any hidden dairy.

Roasted Pork Chops and Peaches Recipe, one of my go to recipes for an easy dinner night.
Ingredients
- 1 cup long-grain rice
- 1/3 cup chopped fresh parsley
- 1/4 small red onion, very thinly sliced
- 2 medium peaches, halved and very thinly sliced
- 1 tablespoon brown sugar
- 1 tablespoon fresh lemon juice
- Pinch of red-pepper flakes
- Coarse salt and ground pepper
- 4 bone-in pork chops (1 inch thick)
- Oil for grill

Warm up with a bowl of comforting, hearty split pea soup, comfort food in a bowl, homemade soup does wonders for the soul!

- 1/2 teaspoon dried oregano

Garlic and basil flavor the tomato sauce that coats this tender Chicken Marinara. A friend gave me this skillet recipe several years ago. It's easy to make using pre-sliced mushrooms, commercial pasta sauce and quick-cooking pasta.

- 2 cups sliced fresh mushrooms
- 3 garlic cloves, minced
- 1 teaspoon dried basil
- 1/2 teaspoon Italian seasoning (always check the label)

- 1/2 cup dry red wine or chicken broth
- Hot cooked angel hair pasta or spaghetti
Wrapped in bacon and topped with KRAFT BBQ sauce, green onions and shredded cheese, these hot dogs have a delicious down-home appeal.
